On Homeless Sunday not only did the Rev. Suze open the doors of St M’s Parish Church to welcome those who have no home they call their own but she also served up a generous helping of Ken’s delicious Beef Goulash.
As Minnie B certainly enjoyed tucking into a bowl of this heart-warming dish on a bitterly cold day – my hope is that you will too!
Ingredients:
1Ib Stewing Beef
120g Onions
120g Carrots
8 Turned Potatoes
30g Paprika
30g Flour
30g Tomato Purée
45g Lard
3/4 litre Stock using Water with
A Can of John Smiths’ Smooth Beer.
The Recipe:
Remove the excess fat from the beef and cut into 2cm. square pieces.
Season and fry in the hot fat until slightly coloured.
Add the chopped onion, cover with a lid and sweat gently for 3 or 4 minutes.
Add the flour and paprika and mix in with a wooden spoon.
Cook out in the oven or on top of the stove.
Add the tomato purée, mix in and gradually add the stock, stir to the boil, skim, season and cover with a lid and allow to simmer preferably in the oven for approximately 2 hours until the meat is tender.
Add the potatoes and check that they are covered with the sauce and add more stock if required.
Recover with the lid and cook gently until the potatoes are cooked.
Skim and correct the seasoning and consistency.
Add a little cream, serve and enjoy!
